Requirements:

  • Experience in management and monitoring of staff
  • Control and management of stock knowledge
  • Ability to control Food Cost of all areas.
  • Ensure that company assets are safeguarded and appropriately maintained.
  • Control over maintenance of occupational health and safety in terms of the OHSA.
  • Control of cash daily.
  • Banqueting Management, control.
  • Analyse and interpret daily turnover and food cost results.
  • Determine and implement corrective / proactive action.
  • Providing marketing initiatives and implementation of marketing programmes.
  • Working knowledge of labour legislation and basic knowledge of SA labour law.
  • Knowledge of operational standards and procedures of a kitchen including preparation.
  • Regularly evaluate operating costs and keeping cost to a minimum whilst not affecting standards.
  • A strong sense of analytical skills, decision making, problem solving, results focused and self-motivated.
  • Must be able to work under pressure and meet deadlines.
  • Good staff relations to maintain a comfortable and productive working environment for all concerned.
  • Manage shift rosters, staff leave and absenteeism.
  • An independent thinker to manage creatively and competently.
  • Manage team performance.
  • Manage customer relationships; ensure highest possible level of customer service and dealing with customer complaints.
  • Development, training, and motivation of staff.
  • Strong communication- and leadership skills.
